My Grams has been staying with us and she wanted oatmeal cookies. So of course normal oatmeal containers have a recipe for oatmeal cookies…right? Well, the oatmeal we have doesn’t have any recipes on it, at all! Can you believe that?!? So I went scavenging for an oatmeal cookie recipe and I came across my Nana’s recipe entitled “Brown Sugar Oatmeal Cookies.” This title is completely deceiving! Don’t get me wrong, these bar things turn out really good and it reminds me of granola! I LOVE GRANOLA! They are soft and chewy, like a cookie or bar, and crunchy, like granola. So here is the recipe, literally takes 7 min to mix and toss in the oven; easy-peasy!
1 1/2 cups flour
1 cup butter, softened
2/3 cup oatmeal
2/3 cup brown sugar
Mix all ingredients until blended and crumbly.
Press, evenly, into a 15x10x1 greased pan.
I didn’t have the size pan that is needed, so I doubled the recipe and used a jelly roll pan.
Bake for about 40 min.
When done it won’t be shiny, and will be a bit firm with some spring to it.
Cut into squares, when warm! Really, cut them maybe 5 min when out of the oven; if you wait until it is cool it will be hard to cut.
We have decided these would be great with yogurt, frozen yogurt, ice cream or fruit.
*I have them sealed in a plastic container and they are now very crunch, this happened overnight.
