Zucchini Brownies

We have  a lovely garden, with 2 zucchini plants, and it has produced so many wonderful zucchinis.  We have shredded them to add to eggs, grilled, bar-b-qued, and roasted them, but have yet to bake them.  Until now!  We were having a little visit with friends from Texas, and we thought brownies were the perfect afternoon treat.  This recipe is so easy and doesn’t use too many ingredients.

First, pre-heat the oven at 350ºF.

Then, start shredding about 2 heaping cups of zucchini.  The food processor does the job in under a minute!

In a large bowl add 1 cup of sugar, 2 large eggs, 1 tablespoon of vanilla, 1/4 a cup of melted butter, and 1/2 a teaspoon of an all natural salt.  I used sea salt, but I’m sure any salt will be fine.  Whisk all of these ingredients, until combined.

Add the 2 heaping cups of zucchini and mix together.

Sift together 1 cup all-purpose flour, 1/4 cup cocoa powder, 2 teaspoons baking soda, and 1/2 teaspoon of cinnamon.  You can leave out the cinnamon, but it gives these brownies a really yummy flavor.

Stir in the sifted ingredients, just until they have been combined.

Now add some mini-chocolate chips.  Mmmm chocolate goodness!  I added about 1 1/2 cups.

After the chocolate chips have been mixed in, pour into a prepared pan.  You can either line the  8×8 pan with parchment paper, or use baking spray.  I used baking spray, because I was all out of parchment paper.  As you can see, these brownies will be thick!  Bake at 350ºF for about 30-35 minutes.

Slightly cool and then enjoy!  These are loaded with chocolate flavor, and you can’t even tell it has zucchini in it.

Preheat and bake at 350ºF for 30-35 minutes

  • 1 cup sugar
  • 2 large eggs
  • 1 tablespoon vanilla
  • 1/4 teaspoon sea salt
  • 1/4 cup melted butter
  • 2 heaping cups shredded zucchini
  • 1 cup all purpose flour
  • 1/4 cup cocoa powder
  • 2 teaspoons baking soda
  • 1/2 teaspoon cinnamon
  • 1 1/2 cups mini-chocolate chips

Whisk together sugar, eggs, vanilla, sea salt, and melted butter.  Add shredded zucchini and combine.  Sift together flour, cocoa powder, baking soda, and cinnamon. Add to liquid mixture and stir until combined.  Stir in mini-chocolate chips.
